Varietal/Blend: 77% Pinot Noir, 23% Chardonnay
Farming: Certified Biodynamic (ECO-CERT), (Demeter)
Fermentation:  Pinot Noir : 57 % in enameled tanks with temperature control, 43 % in 200 L oak barrels.  Chardonnay: in enameled tanks with temperature control.  Full Malolactic fermentation.
Aging: 17 months in Enameled tanks, and 35% in barrel   Aging in bottle: 11 years
Alcohol: 12.4 %
Bottling date: February 2004  Disgorgement date: July 8th, 2015
Vine Age: 15-20 years           Soil: Kimmeridgian clay, Limestone, Chalk

Very low dosage of 4.8g/l.  6mg of free S02.

Full-bodied, bone dry at 4.8 grams of sugar per liter, and with flavors of mushroom and chalk in full harmony.  From the heralded 2002 vintage.

Fermentation:  75 % in enameled tanks with temperature control, 25% in 200L oak barrels.  Full Malolactic fermentation.
Aging: 10 months in Enameled tanks, and 25% in barrel   Aging in bottle: 8 years
Alcohol: 12.7 %
Bottling date: July 2007  Disgorgement date: July 1st, 2015
Vine Age: 20 years           Soil: Kimmeridgian clay, Limestone, Chalk

Very low dosage of 4.4g/l.  4mg of free S02.

This wine is rich in body with a complex layered minerality. Complex chalk and wet stone on the nose with lemon curd, floral notes and hazelnuts on the palate. This wine has a long lingering linear finish dominated by stone fruits and herbs. An incredible effort.

From the very beginning, the Fleury family have always strived to balance a respect for tradition with a fierce desire for innovation. 

With the harvest of 2009, after 20 years of biodynamic management of the vines themselves, Jean-Pierre Fleury and his son Jean-Sébastien decided to take these practices one step further and apply the same biodynamic principles to the vineyard and its processes.
