Farming: Certified Biodynamic (ECO-CERT), (Demeter)
Fermentation: Grapes are 100% de-stemmed and put into fiber tank by hand (no pumping). Fermentation last on average 2 months with 1 or 2 pumping over per day according to tannin extraction. Free-run juice and press juice are separately put into fiber tank to wait for malo. Once malo is completed, the juice is racked and left to age on the fine lees still in fiber tank. First bottling happens in May.
Alcohol: 13 %
Vine Age: 40 years old on average. Soil: Schist and micro granite.
Aging: Without any sulfur. 8 months aging in fiber tank.
No fining, No filtration.
Bottling: Sulfur free
