CHINON ROUGE
Varietal/Blend: 100% Cabernet Franc
Farming: Organic
Fermentation: Indigenous yeast. Grapes are 100% de-stemmed and put into concrete tank for a short cold maceration. Light pumping over to ensure a slight extraction. Free-run juice and press juice are separately put into concrete tank to age.
Alcohol: 12.5 %
Vine Age: 12 years old (always the youngest vineyard in this cuvee) Soil: Clay and limestone with sedimentary sand.
Aging: 8 months in concrete.
No fining, No filtration.
Harvested by hand. 8,5 ha. This cuvee is a blend of different plots (plateau and hillside around the castle).

Varietal/Blend: 100% Cabernet Franc
Farming: Organic
Fermentation: Indigenous yeast. Grapes are 100% de-stemmed and put into tank for 3 weeks maceration with light pumping over. Racked once to tank before aging in 60Hl foudre.
Alcohol: 12.5 %
Vine Age: 20 years Soil: Yellow sedimentary sand, sandstone with shallow tuffeau
