CHINON ROUGE

Varietal/Blend: 100% Cabernet Franc
Farming: Organic
Fermentation:  Indigenous yeast. Grapes are 100% de-stemmed and put into concrete tank for a short cold maceration.  Light pumping over to ensure a slight extraction.  Free-run juice and press juice are separately put into concrete tank to age.  
Alcohol: 12.5 %
Vine Age: 12 years old (always the youngest vineyard in this cuvee)       Soil: Clay and limestone with sedimentary sand.

Aging: 8 months in concrete.

No fining, No filtration. 

Harvested by hand.  8,5 ha.  This cuvee is a blend of different plots (plateau and hillside around the castle).

BONNAVENTURE CHINON

Varietal/Blend: 100% Cabernet Franc
Farming: Organic
Fermentation:  Indigenous yeast.  Grapes are 100% de-stemmed and put into tank for 3 weeks maceration with light pumping over.  Racked once to tank before aging in 60Hl foudre. 
Alcohol: 12.5 %
Vine Age: 20 years           Soil: Yellow sedimentary sand, sandstone with shallow tuffeau

 

Aging: 12 months in 60HL foudre.

No fining, No filtration.

Hand harvested. 1,7 ha.  Parcels selection of soil 100% made of yellow sand and freestone.

More structure, more power but still on the fruit because of the sandy soil.

FRANCS DE PIEDS

Varietal/Blend: 100% Cabernet Franc
Farming: Organic
Fermentation:  Indigenous yeast.  Grapes are 100% de-stemmed and put into tank for 3 weeks maceration with light pumping over.  Racked once to tank before aging in old barrels. 
Alcohol: 12.5 %
Vine Age: Vineyard planted in 2003           Soil: Clay and limestone with sand.

Aging: 18 months in barrel with 10% new oak.

No fining, No filtration.

Hand harvested into small bins. 0,25 ha of vineyard. This wine is not produced every year; only when the expression and balance are acheived. This is a very tiny production.

This non-grafted vineyard was just for fun at the beginning, as Franc de Pieds in general have to be replanted every 7 years.  However, because of the right proportion of clay and sand, the phylloxera doesn’t grow and the vineyard strangely keeps thriving and producing some of the most pure and true expression of Cab Franc.

LES PICASSES

Varietal/Blend: 100% Cabernet Franc
Farming: Organic
Fermentation:  Indigenous yeast.  Grapes are 100% de-stemmed and put into tank for 3 weeks maceration with light pumping over.  Racked once to tank before aging in barrel with 1/3 new oak.. 
Alcohol: 13 %
Vine Age: 35 years old          Soil: Clay and limestone.

Aging: 18 months in barrel with 1/3 new oak.

No fining, No filtration.

Hand harvested into small bins. 2,40 ha of vineyard. 

Les Picasses is the name of the hill where this wine comes from.  The hillsides are parallel to the Loire River with a north and south exposure.  Coulaine’s vineyard is located on the top of the hill with a due south exposure.
